It's a cute little town with plenty to do, nice restuarants, charming architecture and pretty safe. I'd go back in a heartbeat. I ended up going with some friends to a club on the outskirts of PV and there were only Mexicans there. I only saw one or two gringos. There actually are Mexicans to be found in PV, but you'll have to head off the main street to for more non-gringo places.
Thanks guys. Do you remember any names of places where you ate/partied?
Hopefully, San Pancho will be a little less "touristy." Hard to say though. It's going to be a great trip regardless: house on the beach, personal chef for the week, renowned surf, fishing tournament on Saturday, and plenty of time in between for debauchery, buffoonery, and the like.
Fortune favors the bold.

RE: Mexico
I lived in Puerto Vallarta for a year
First of all, the apartments right behind Walmart are only 3000 pesos per month to rent. Secondly, if you go into nayarit or the place behind vallarta, its a little cheaper and its MUCH cheaper right beside the airport. Also the best tacos in the place. There is also a town outside of Vallarta...the name also escapes me but you can take a bus out there, takes about 20 minutes or so to get to... its past the concert hall. Anyway, its MUCH cheaper to live in aswell. I have a friend from Puerto Vallarta he's very cool, I could hook you up with him if you like. I'm sure he'd be happy to show you around, it'll help him to practice his English.
My ex-gf's father used to run the sol melia haha... rich girl. I would eat there every night for free. Great buffet there btw, costs 300 pesos for one meal. Don't goto the Marina...those people are pricks and its REALLY REALLY expensive there. You can get a job at Puerto Vallarta Adventures if you're really hard up for some cash... they pay about 50 bucks a day... not great. There's also a place to teach English in Plaza Del Sol... they also don't pay very well but this is a tourist town. I met one woman who sold timeshares, didn't seem like a great job. I wasn't very happy at PV after the first few months... couldn't find anything to do except play video games, lay on the beach and go to parties with my girlfriend (19 y/o, I was 26). Guadalajara has more jobs and more people... its not too far away. Lived there for 6 months aswell... much better IMO except the pollution kinda sucked. Lived in a HOUSE in GDL (2 floors) for 3500 per month. Bought all used appliances and haggled at the farmer's market... excellent time there! Food cost me around 200 pesos per month. Made about 5000/month teaching a few classes per week. Stayed home and played PS2 for 6 months... fantastic time... fruit is so cheap out there. Went back to PV and thought... fvck this! Never again...
If you want to meet girls, go hang out at the UNIVA campus or the public university (I can't remember the name)... you can meet tons of girls there and they all look like Belanova wannabes.
Watchout for the police, I was robbed twice by them. There are lots of women that will respond to you on Couchsurfing. I lived just outside the beach for 3500 and also behind walmart for 3000 (a decent 3 bedroom place). I mostly just used it to bang my gf at the time.
Vallarta is not typical Mexico...infact its pretty boring once the novelty of the beach and nightclubs wear off. The women are all fresas also...so expect lots of attitude.
PM me if you'd like, I can add you to couchsurfing.
Lastly: BEWARE OF THE CROCODILES
its a real thing.. they like to hang out on the golf course infront of the marina and sometimes down at the beach closer to the mexican beach... dont fvcking go down there or go into the water. I saw one once swimming down the river, he had to be a good 8 ft long... Also BEWARE THE TARANTULAS if you go out towards the airport... fvcking things were everywhere in my house... big milipedes and tarantulas!!! Smash em as soon as you see them.
