But if they also offer the kind of ID I think they do, wouldn't the lack of border stamps make them look suspicious to a hotel receptionist, landlord, or telecom employee?

Viber has a small location icon, right next to the send message icon. If it's blue, it's on. Make sure it's gray. No need to turn off the location on your phone, just on Viber.

That icon is annoyingly placed that's for sure. And the pinay girl was no Sherlock, when you send your location with that blue thing, she gets a location icon right next to your message, literally begging to be clicked.
